What I do
I do the last checks on the final manuscript to ensure it is clean for submission.
What I check in a proofread

I check that the layout of the manuscript is internally consistent.
This includes:
checking that each page has the same size margins
checking that there is a clear flow of text around figures and tables
checking that there are no single lines at the bottom or top of the page
checking that there are no odd wide spaces within the flow of the text
checking that no last lines of paragraphs are missing

I check that the formatting of the manuscript is internally consistent.
This includes:
checking that all headings are clearly marked and have the same font and size
checking that each image has a caption and all captions have the same structure
checking that all normal paragraphs are formatted in the same way
checking that all pages have the required headers and footers and that the their content is correctly adjusted for each page
checking for congruency between the TOC and the content
checking for congruency between the list of figures and the figures in the text (same for the list of tables)

I read the whole manuscript to ensure that there are no mistakes.
This includes:
checking for grammar mistakes, spelling mistakes and punctuation mistakes
checking that there is no duplication of words
checking that there is no text missing
